There are 5 different types of documents:
Document_Page
Document_Snippet
Document_Link
Document_Folder
Document_Email
The Document_Email extends the Document_Snippet. This document type is used to send emails.
In the "Settings" tab you can define the subject/recipients
If the email logging isn't deactivated by the Pimcore_Mail Class you can see the the sent emails in the "Sent Emails" Tab.
(The Column "Dynamic params" is hidden by default so you have to unhide it manually)
